#76 Banoffee Pie
When I lived in London in 2006 I had this fantastic dessert at my friend Louisa's house called Banoffee Pie. This delectable treat does not seem to exist in North America unfortunately... I have never seen it anywhere nor met another Canadian who seems to know what it is! So as part of my list I had taken it upon myself to obtain a recipe and attempt to make it myself :) I did not want to just pick a random recipe off the internet as that could very well be hit or miss and may not be as good as I remembered. Luckily, my friend Caylee who is currently in Scotland saw that it was one of my goals and contacted me on Facebook with her bf's mom's recipe... and Easter seemed like a perfect excuse to make it! I spent most of the afternoon on Sunday baking it as it takes a couple of hours to boil the condensed milk, but it was well worth it and super yummy!! I think I may need to use a deeper pan next time though so I can make the crust a little thicker and put more whipped cream on top :) Check out the pic and the recipe below:
2 400ml/14 oz cans sweetened condensed milk
6 tablespoons melted butter
9 oz crushed digestive biscuits (can use graham cracker crumbs in place of)
4 ripe bananas
1 tablespoon lemon juice
1 teaspoon vanilla essence
450ml/16 oz thick double cream whipped
Place the cans of milk in a large saucepan and cover them with water. Bring to the boil and then reduce the heat and simmer for two hours. Ensure the water is topped up regularly to keep the cans covered. Carefully lift out the hot cans and leave to cool. Preheat the oven to 180c/350F. Grease a 9 inch flan tin with butter. Put remaining butter into a bowl and add the biscuits. Mix together well, and then press the mixture evenly into the base and sides of the flan tin. Bake for 10-12 min, then remove from the oven and leave to cool.
Peel and slice the bananas and put them into a bowl. Sprinkle over the lemon juice and vanilla essence and mix gently. Spread the banana mixture over the biscuit base, then open the can of condensed milk and spoon the contents over the bananas
Top with whipped cream. Scatter with grated chocolate flakes.
